    Oats are one of my favourite breakfasts. They’re warming, filling, quick to make, nutritious and you can easily create different tastes by adding different toppings.

    It is so important to start your day off right with a good breakfast. It literally breaks the fast your body was in as you slept, kickstarts your digestive system, keeps you full ’til lunchtime and prevents you from reaching for the bad stuff.

    This coconut and blueberry baked oatmeal makes a delicious breakfast that you can grab-and-go. Just make it ahead of time and it's an easy breakfast to grab when you're in a rush in the mornings.     Another way to enjoy oats in the morning is baked oatmeal. I love this way of eating them as I can bake a big batch that I can easily grab-and-go on the way to work (I always eat breakfast at work) and it feels like I’m eating cake for breakfast. How indulgent.

    There are many recipes for baked oatmeal. This one calls for blueberries and coconut, however it also tastes great with sliced ripe bananas. You can make baked oatmeal with any combination of fruit and even nuts and chocolate chips. Who said breakfast had to be boring?! Throw out your cardboard cereals and give baked oatmeal a go.

    Eat Clean Blueberry and Coconut Baked Oatmeal

    A simple, nutritious and filling baked oatmeal recipe, perfect for a grab and go breakfast when made ahead.

    • 2 cups oats
    • 2 cups almond milk
    • 1 cup blueberries
    • 1/2 cup desiccated coconut
    • 1 large egg
    • 1 tsp cinnamon
    • 2 tbsp coconut oil
    • 1 tsp vanilla extract
    • 1/2 tsp salt
    • 1 tsp baking powder
    • 2 tbsp truvia ((to taste))
    1. Preheat your oven to 180 degrees.
    2. Gently whisk the egg with a fork.
    3. Mix together all of the ingredients in to a baking dish, making sure all of the cinnamon, truvia and blueberries are evenly spread out.
    4. Bake in the oven for 25-35 minutes, checking throughout. Once baked all the way through, bring out of the oven and let it cool.
    5. Slice into 4 or 6 servings. Either serve warm straight away, or refrigerate and reheat later with a splash of almond milk.

      That looks delicious! I’ve got a friend coming over today and we’re going to make coconut flour banana pancakes, but I might have to convince her that we should try this instead…
